Known for his innovative flare and mastery of complex ingredient pairings, pastry chef Chris Ford is an esteemed veteran of some of the country’s most famed kitchens. Ford graduated from the Le Cordon Bleu Program at Orlando Culinary Academy before assuming his first post at Norman’s at the Ritz-Carlton Orlando. In 2007, the Florida native moved north for the coveted sous chef position at New York’s famed dessert bar ChikaLicious where he was recognized for his nuanced creations. In 2009, Ford joined Trummer’s on Main at the Clifton Hotel in Virginia, where he was lauded by StarChef as a Rising Star in the Washington, DC region.
Through his work for the Mina Group and Four Seasons Hotel Baltimore, Ford prepares unique, flavorful desserts for Wit & Wisdom and PABU restaurants. “The best kind of dessert is an engaging one,” says Ford. At PABU, he celebrates authentic Japanese textures, flavor profiles and presentations through modern, exciting creations.
